Mash half of the blueberries, adding the contents to the above step
Gently toss until the berries are coated before setting the mixture aside
Unroll the pie crusts onto a flowered surface
Cut out circles to fit a mini muffin cup
Add blueberry mixture to each cup
Cover the cups with excess pie crust
Lightly beat and brush the outside with the egg yolk
Bake for 13-17 minutes until the crust is golden
Cool pan for 10 minutes and enjoy!
